When making a rip cut,should one set the sheet material upon sawhorses or is there a better way to rip plywood

I have cut plywood in this way many times! It works well. I like the suggestion of useing the foam underneath as well. I would turn the 2x stock to run with the cut and on either side to avoid damaging them and set the blade to just go through. On some occasions (splitting a sheet in half in either direction) it is much easier to reach when you are on top of the work rather than reaching accross.
