How come it's bad to eat a human no matter what, but eating a dolphin is worse than eating a cow?

You can't eat a human being regardless of whether its a doctor or a hillbilly, but all of a sudden intelligence level matters when thinking about which other animals to eat.. And put aside the cannibalistic factor, pretend you're like me. What the hell am I supposed to think?
